Wine information
The focus of this exquisite champagne is the single-varietal Pinot Noir from 2019 - carefully matured in wooden barrels. With a tirage in spring 2020 and dégorgement in summer 2022, this is an extra brut product of remarkable quality. Exclusivity is guaranteed, as only 1,000 bottles of this sparkling wine were produced.

Color
The platinum-coloured appearance of this champagne captivates with a fine perlage and hints of elegance.

Nose
Le Champs de l'Epinette unfolds a fragrance that sets standards. Starting with nuances of lemon cream, white nougat and a hint of brioche, complemented by subtle accents of lime and oyster shell. Surprisingly enriched by hints of red berries, rounded off by a subtle hint of pomegranate.

Palate
On the palate, the Pinot Noir Extra Brut presents itself as a lively, dynamic powerhouse with enticingly clear and precise acidity. The perlage sparkles refreshingly before gently dissolving into notes of juicy ripe fruit reminiscent of pears, quinces and lemons as well as green and red berries. This sensory journey is accompanied by a slightly chalky finish reminiscent of oyster shells, rounded off by a hint of iodine.

Food recommendations
To round off the pleasure journey of this champagne, we recommend the following dishes. Warm up with a hearty winter salad with smoked trout fillet. Or try tartelettes, where the sweet butternut harmonises perfectly with the slightly acidic taste of blue cheese. Samosas filled with figs, pumpkin and walnuts provide an extraordinary taste experience - a real treat!
