Tasting note from 03/24/2019, copyright Peter Müller

Color:

In light straw yellow with white-golden reflexes and a lively perlage, the wine appears clear and shiny in the glass.

Nose:

With the beguiling grace of a yellow apple left on the windowsill after being bitten off, this cuvée of primarily Chardonnay and Pinot Noir brings to light the beauty of the transience of things and perpetuates it in one of its most exciting stages. Intertwined in aromatic complexity, notes of freshly baked yeast plait with toasted hazelnuts reveal themselves, infused with veins of duck liver terrine, apricot jam and sweet wine jelly with rosehip. This is joined by fragrant spice from hibiscus flowers and ginger, as well as green pepper and liquorice.

Palate:

With a powerful attack on the palate, the 2004 L'Aérienne Brut Nature from Tarlant is initially aromatically explosive. With its exquisitely integrated perlage and straightforward acidity, as well as the subtle bitterness of a first-class olive oil, the head of character enjoys a long stony finish. With stately size, charisma and a spirited breeze of Curry Leaf, this great contemporary has come to etch itself into gustatory memory.

Food recommendations by Peter Müller:

  • King pies with chanterelles and chives
    (Mushrooms and truffles, chanterelles)
  • Fried monkfish with warm seaweed salad, okra and black rice
(fish, monkfish, seaweed and kelp, wild rice, rice)
  • Crab meat with bisque and rosemary potato bread
    (seafood, crabs & crayfish, potato)
