The white wine "La Montagne" is a remarkable product from the hand of Philippe Gimel, who has created this sublime drop from the leading grape varieties Grenache blanc, Clairette and Bourboulenc, all originating from the South of France. One cannot help but draw parallels to the white Châteauneuf-du-Pape when tasting this wine. The grapes for this wine come from the windy heights of Mont Ventoux, of which just 20 hl/ha are harvested. The entire ageing process takes place in stainless steel tanks. At first, the fruit dominates before a spicy complexity sets in. Pasteur Gimel predicts that this wine could easily age for two decades.
Visually, "La Montagne" presents itself in an intense straw-yellow colour. Initially, scents reminiscent of roughened rubber dominate, a peculiarity that is typical of white wines from the southern region and therefore makes the wine recommendable to carafe. Once opened, it unfolds a diverse bouquet of fresh and dried fruits, including candied citrus, fresh kumquats, soft apricots, yellow pears and a hint of honeydew melon. These fruit aromas interweave with notes of honey, acacia flowers, liquorice, aniseed and stone.
The taste is taut and powerful, characterised by notes of nuts and dried fruit. With its almost steely character and excellent acidity married with a subtle tannic texture, it offers a pleasant warmth and scores with a formidable expression. The "La Montagne" is intense, lush, structured and dense at the same time and therefore a wonderful complement to strong dishes.
Gourmet recommendations that could harmonise well are a grilled halibut and fennel with a reduction of aniseed and wild rosemary, veal tripe with vegetables or a traditional fish soup inspired by the bouillabaisse.
