Description of the wine
The original sparkling cider, "La Folletière", comes from the heart of Lesuffleurs, a commune that bears its name in respect of cider producers. The rich soil of silt and brown flint, topped with a base of clay and flint and a strong foundation of chalk, cultivates the basis for this exquisite cider. The cider brings together 15 different apple varieties, with 25% sour apples such as Rambeau and René Martin, 50% bittersweet apples such as Bedan and Binet Rouge, and another 25% bitter-tannic varieties such as Mettais and Frèquin. All come from trees planted in 1996 in precise alignment at a density of 700 semi-high trunks per hectare. With a residual sugar of around 40 grams and artisanal influence from harvest to fermentation, this cider has found its shape through the traditional method.

La Folletière is a bouquet of aromas that masterfully combines and celebrates the diversity of apple varieties. It invites the nose with sweet apples, sour and bitter elements challenged by a rugged freshness and a noticeable acidity, accompanied by tannic notes. Delicate nuances of yeast fragrance, mellow fruit, peel, lime and undergrowth enrich the aroma, rounded off with hints of peach and lambic.

This cider knows how to flatter the palate. The acidity and tannin structure make themselves gently felt, while the sweetness is perfectly balanced. The cider is rich and sensual, with notes of ripe yellow and red apples, quince and a hint of soft apricots. Hints of ginger and tobacco round out the taste. The apple sparkling wine skilfully balances sweetness and tartness, offering a firmness that nevertheless makes it feel as airy as a Gugelhupf. The penetrating acidity gives the cider a subtle sharpness and contributes to the pleasant drinking flow of this juicy, sweet and tart-sour drink.
