It is made up of five grape varieties with a majority of Malvasía, a touch of Albillo, Moscatel, Palomino and Verdejo. The vines were planted between 1920 and 1988. After the harvest, the grapes are spread out in trays and dried in the open air until New Year's Day. The dried grapes are then gently pressed for up to 48 hours before the must is transferred to French oak barrels where it ferments for around ten months before maturing for 36 months in used 225-litre French oak barrels. This La Dulce Quietud consists of the 2014-2018 vintages and was bottled in July 2021 at 10.5% and 265 grams of residual sugar in 950 bottles of 500ml each.

Nose

Multi-layered and complex, the nose of La Dulce Quietud unpacks like a Win-Zip file. Rich fruity aromas set the tone, first and foremost an umbel of fresh dates, followed by dried figs and the finest candied orange peel. Bergamot and pickled ginger follow right on their heels, spicily rounded off by a little linseed oil, shellac and light tobacco with a hint of furniture polish in the overtone range.

Mouth

On the palate, the fruity aromas shift towards pronounced dried fruit notes. Dried fruits like candied orange peel and apricots mingle with pure acacia honey and are florally rounded with orange blossom water. The texture is extract-rich, creamy and viscous with spicy accents in the orchestral finish.
