Already under father Roland Gillot, the winery was one of the best in Rheinhessen. With the arrival of daughter Carolin, a breath of fresh air came into the house, and at the latest since her marriage to H. O. Spanier, the winery catapulted to the top of Rheinhessen or even Germany. With her husband, Carolin switched to organic farming with biodynamic elements. Carolin Gillot draws on an extraordinary potential of vineyards. Not only around Bodenheim, where excellent red wines and the estate wines grow. In particular, the terroir on the Rote Hang is world class, and here the winery owns shares in the best sites, such as Rothenberg, Pettenthal or Hipping.
