Wine information

The vines of this chasselas grow on the steep slopes of the winery on partly bare Jurassic limestone with a humus layer that is often only a few centimetres thick. The grapes are very small and the yields correspondingly low, which ensures concentration, complexity and a pronounced minerality. The wines of the winery are all fermented spontaneously and do not receive any other additions except for a light filling sulphur shortly before bottling. This wine was only very coarsely filtered, if at all. The Chasselas did not get an A.P. number because it was not "typical enough" for the wine inspectorate, although this is actually the traditional way of making it. Therefore it is not allowed Isteiner name. We have therefore added a black bar to it without further ado. Now it is a country wine. The wine was left on the lees for a particularly long time and unsulphured in the large wood.

Nose

The Chasselas offers a slight reduction on the nose, which is expressed in a note of slightly burnt rubber. More distinct, however, are fruity notes of quince, apples, star fruit and mirabelles in combination with rocks, lime blossom and dried herbs.

Palate

On the palate, this is a very linear, extremely precise and clear wine that was harvested at just 11.5 vol.-% alcohol and yet has just the right fullness, accompanied by the melting of the long lees ageing. The fruit is interspersed with excellent acidity and the present minerality of the Jurassic limestone. And the slight reduction also remains present and brings additional complexity to the palate. This leads to a very nice independence.
