Nose
The Eitelsbach Carthusian Courtyard Hill Riesling Kabinett reveals its youth with a yeasty nose that is still restless at the beginning, behind which the slate only gradually peeks out, which then has a little smoke and fruit in its luggage. The pears are green, the apples green and yellow and so are the crisp plums. But above all, there are citrus aspects and notes of local garden herbs. The Riesling cannot be clearly recognised as such at first, but the slate is clearly and distinctly defined.
Palate
On the palate, it quickly becomes clear that this Cabinet fizzes and builds up pressure and presents such a clear acidity that the official 7.7 grams keep the 37 grams of residual sweetness neatly in check. This Riesling is spotless, piquant in its slightly tart slate aroma, brilliant and precise in its acidity, vital due to the clear slate minerality, and also creamy and salty. If it weren't for the restlessness caused by the yeast, one would want to drink it directly in large gulps. As it is, you can just about hold back. But the decision of longer yeast storage was the right one for a great future of this wine.
