Wine information
The Les Fouillouses site in Juliénas covers 39 hectares, of which the Chastels own 1.05 hectares. The site is located slightly northwest of the village centre on slate-like blue volcanic rock and diorite. The Gamay noir à jus blanc, as it is called in full, is around 70 years old and yields between 25 and 35 hl/ha. After manual harvesting and sorting, whole bunches were used. Undamaged berries were placed at the bottom of the concrete cuve, and bruised ones on top, so that the Gamay could be left to ferment for around twelve days. Macération semi-carbonique could pass through. The wine was then aged for twelve months in five-year-old wood.

Nose
The Juliénas creates a combination of slightly sweet, tart and earthy aromas in the fragrance, reminiscent of violets, roses and lilac, of lightly toasted herbs, sweet cherries and raspberries on a bed of damp earth and some moss.
Palate
On the palate the Les Fouillouses At first a pure very clear fruit of dark berries and cherries, into which some liquorice and a few Indian spices slowly creep in. The Beaujolais Cru impresses with a vital acid structure and a powdery fine tannin in combination with slightly smoky and salty notes. On the one hand it has a lot of power, on the other hand a lot of energy and seems very polished until the long finish.
