Wine information
The champagne Les Galipes de Coulommes by Jean Servagnat is an assemblage of 65 % Meunier, 25 % Chardonnay and 10 % Pinot Noir from grapes grown in the village of Coulommes la Montagne in the far north of the Montagne de Reims. The name »Galipe« comes from a local idiom meaning »Wineyard«. A loamy-limestone terroir is typical here. About 60 % were used from grapes of the 2018 harvest, the remaining 40 % came from reserve wines; fermentation was spontaneous, and malolactic. The tirage took place in April 2018. This batch was disgorged on 25. 7. 2022. The dosage is 1.7 g/l.

Nose
The bouquet of this champagne has everything that one appreciates in a good vintner's champagne. There are scents of white flowers, ripe lemons, kumquats with their peel, lemon cream and some white-fleshed stone fruit. In addition, there is jasmine, white nougat and warm pastry with a hint of sweetness and roasted nuts. Everything seems lively and fresh, at the same time elegant and pleasantly mature.
Palate
It continues seamlessly on the palate. The champagne has so much fullness that it fully lines the mouth. Other champagnes achieve this by foaming on the palate, but not this one. Les Galipes de Coulommes. Its mousseux is fine, but not too fine, so that you can feel it pleasantly while engaging with the juicy citrus and spicy fruit. The aromatic richness is steered in the right direction by a lively acidity. On the palate, the champagne seems even fresher than on the nose, but combines this with a sensual ripe fruit and notes of puff pastry. It seems to be all of a piece, and when all this comes together, the bottle is emptied very quickly, especially since there is a good dose of salt lemon in the finale, which makes you want the next glass straight away.
