Apricots from Roussillon are preserved in Jean-Paul Metté's Abricot Eau-De-Vie, filtered and sugared to produce this aromatic liqueur. Tasting note by Emmanuel Nasti Golden colour with golden, vivid reflections. On the nose, like the Eau-de-Vie, this liqueur shows ripe but not overripe aromas underlined by vanilla notes. The palate also reveals these aromas and the sweetness of the fruit, which further enhance the impression of the bouquet. Emmanuel Nasti, head sommelier and co-owner of the starred restaurant Le Chambard in Kaysersberg, is a border crosser. An architect by training, he has devoted himself to his passion, excellent cuisine and wine, since 1995. He has a special passion for Alsatian wines and spirits and keeps in close contact with the producers in the region. He is constantly on the lookout for new combinations between dishes and the right accompaniment.
