The Hondarribi Zuri grape variety is a rare, autochthonous grape variety in the north of Spain. Its home is the town of Hondarribia and "Zuri" means white in Basque. There are numerous synonyms for this grape variety. It is usually produced as a light white wine and drunk young. It also appears from time to time in cuvées with international grape varieties.

Nose
Why should sparkling wine in the form of elegance not work in the high altitudes of Rioja with a large proportion of limestone? It presents itself slender and linear. The yeast is noticeable, but does not dominate the aroma. Lemon balm, parsley and nettle lead the way. Closely followed by some mint as well as lime and grapefruit. Freshly cut apples and wet grass. This is joined by a delicate note of yeast plait along with mirabelle plum and peach. Green walnut and a little candied ginger give it a special note at the end.
Palate
The Espumoso from the Hondarribi Zuri grape variety absolutely follows up on the expectations gained from the nose. Lean and racy. Characterised more by herbal aromas than fruit. A cool mouthfeel, a lot of tension and an immediate minerality. The carbonic acid is also well integrated. It drives it forward and shapes the mouthfeel and the reverberation. The mousseux foams up only slightly and is then cut directly by the acid sword. A pleasant bitter note gives it the final touch in the reverberation.
