The Integer reflects a holistic approach to respect the terroir, de Bartoli limits any mechanical, physical or chemical intervention. Without any fertilization or weedkiller and only minimal amounts of sulfur and copper, the grapes for this exceptional Grillo grow until they are finally harvested by hand and selected several times. They are pressed and after a certain period of maceration they begin to ferment spontaneously in used barrels and amphorae, where they undergo malolactic fermentation. After ten months on the fine lees, the Integer is bottled unfiltered, unfined and unsulphurised.
Color
Old gold with orange reflections and slight cloudiness.
Nose
The 2018 Integer by Marco de Bartoli combines the best of both Grillo worlds The present citrus fruit and saline vein of de Bartoli's dry wines can be found here as well as aromas of orange peel, mild spices and oxidative hints that remind of the sweet big brother. Bay leaf, lemon zest and orange oil combine with ethereal spices like white pepper to make you crave that first sip.
Mouth
On the palate, the third dimension of the maceration time is added, which condenses in the distinctive feel of the wine and is reminiscent of strongly drawn Darjeeling. Above all hovers a huge lemon, which takes over one gustatory to retronasal. Dense and juicy, it flows over the palate and builds up ever greater pressure at a low level. Fruit, tannin and salt oscillate in constant change and demand equal cuisine to this exceptionally solitary sip.
