Tasting note from from 08.02.2022, Copyright Sebastian Bordthäuser

The blend of Sangiovese and Cabernet Sauvignon is rounded off with a dash of Merlot in some vintages. The hand-harvested Sangiovese grapes are fermented spontaneously in small open fermenters, while the Cabernet Sauvignon is harvested last and then fermented in stainless steel. Maceration lasts up to 30-35 days with daily pumping over for the Cabernet and gentle pigeage for the Sangiovese. Malolactic fermentation is completed in wood and ageing takes place for up to 26 months in barriques, new oak for the Cabernet Sauvignon and used barrels for the Sangiovese. The final cuvetting takes place after the first year of ageing.

Color

Dark ruby red with black core and violet reflections.

Nose

The nose leaves no doubt and speaks of Tuscany with a firm voice and profound intonation. The flawless cherry of the Sangiovese sings the high song of its origin with nonchalant precision and is strikingly underpinned by the side kick of the Cabernet, which comes across as extremely Tuscanified here. The rich fruit seems dark in extract, with ethereal notes of sandalwood and cedar hovering above it, spiced with mild spices and a few laurels.

Mouth

Juicy, dense and rich in extracts, the 2018 Il Corzano Rosso from Fattoria Corzano e Paterno is bundled with fleshy, firm tannins. Dense and tightly meshed, one feels as if one could literally chew the wine until, accelerated by the bright acidic nerve, it builds up a rapid pace. Cherry, chocolate and spicy kitchen herbs outline it aromatically, even if only insufficiently - the haptic experience of this wine, which leaves no doubt about its origin on the palate, is too strong.
