Information

The Saint-Romain Sous Roche 2020 comes from the site of the same name in the eastern area of the appellation. Sous Roche faces east and is situated at 380 metres. In the vineyard with limestone soil, the so-called Calcosol sur marne de Saint-RomainThe vines are 60 years old. Hand harvest, partial destemming and spontaneous fermentation in stainless steel cuve. A mixture of pigeage and remontage, i.e. underpushing and overflowing of the marc. Malolactic fermentation takes place spontaneously in the barrels. Ageing takes place over ten to twelve months in a mixture of 228-, 350- and 500-litre barriques and tonneaux, of which no more than 10 % are replaced each year. The wine is tasted daily and the barrels are drawn off when Frédéric Buisson deems it appropriate. It is fined with bentonite and filtered only very coarsely. Sulphur is only added at bottling with a maximum of 40 to 50 mg/l total sulphite.

Nose

The Saint-Romain Sous Roche 2020 moves entirely in the style of the house. The fruit - here mainly black cherry and sour cherry - combines with cinnamon bark and black chocolate, slightly green but ripe notes of currant leaves and stalks. On the nose, the wine is as inviting and charming as it is austere.

Palate

On the palate it becomes elegant and silky. It is a wine that already offers a lot of drinking pleasure because the tannin is fine and polished, the texture almost creamy and the red fruit has a sweet core and offers extract sweetness. At the same time, the wine seems extremely elegant and long, noble in its seamless combination of fruit and tannin and also lively in its acid structure. This is simply good and at the same time, like all wines from the Domaine, precise, lean and with a wood that serves and never comes to the fore.
