Information

The Saint-Romain Sous le Château 2020 comes from the site of the same name close to the village. Sous le Château also faces southeast and is situated at 370 metres. In the vineyard with so-called Colluviosol 30-year-old Chardonnay vines are planted on limestone. Hand harvest, whole cluster pressing and spontaneous fermentation in wood. Malolactic fermentation takes place spontaneously in the barrels. Ageing runs for ten to twelve months in a mixture of 228-, 350- and 500-litre barriques and tonneaux, of which no more than 10 % are replaced each year. The wine is tasted daily and the barrels are drawn off when Frédéric Buisson deems it appropriate. It is fined with bentonite and filtered only very coarsely. Sulphur is only added at bottling with a maximum of 40 to 50 mg/l total sulphite.

Nose

The Saint-Romain Sous le Château 2020 is an electrifying bright and citrusy Chardonnay, with a very fine smokiness of flinty reduction notes over it. Lemons in pure form with pips and peels, a few squirts of lime juice and grapefruit combine here with a little green apple and stone. One gets the impression that the wine takes no prisoners.

Palate

The palate shows the clarity and intensity that could already be guessed at in the aroma, and yet the wine seems somewhat softer than guessed. The wood, which is barely perceptible and a little reminiscent of cedar, has rounded off the corners somewhat. The texture seems silky, but the fruit and acidity remain on the bright, citrusy side and provide decent pressure on the palate. In addition, there are notes of stone, herbs and graphite. They make the Sous le Château a beguilingly attractive, coherent wine that has a lot of drinkability.
