Appearance
The deep cherry red, which appears almost black at the core, surrounded by a fine violet nuance at the edges, alone signals a wine that is full of surprises.

Scent
The 2011 Héloise is an aromatic explosion of sweet candied black cherries, preserved cranberries, dry figs, praline and a pinch of truffle. Given room to breathe, an exciting composition of dark tobacco, tar, green pepper and roasted rosemary enters, giving the wine an unmistakably masculine character.

Taste
Already at the first sip, it overwhelms with its finely tuned freshness and an invigorating structure of tannins and acidity. This contrasts impressively with its charming, slightly sweet fruitiness. A multifaceted wine that will increasingly delight with its Burgundian hints as it matures.

Food suggestions
Try it with a mushroom strudel with butter, honey and coriander, served with stewed sultanas, or with black sausage with autumn berries and potato pancakes. Equally excellent with a pheasant dish with black truffle sauce, accompanied by lentils and aged balsamic.
