Bright lemon yellow, golden reflections
Nose
The green tea aroma is dominant, with notes of sencha in particular. In an earthy, spicy way with a lot of depth and seriousness. Bergamot and Amalfi lemon vie for the second rub. The tart nose also reveals quince and yellow apple. The grape is fully present style and stems are clearly perceptible. Yellow mirabelle plums emerge in the background alongside a little lemon balm.
Palate
On the palate, it convinces with structure, phenolic and tannin. The mousseux provides a pleasantly melting texture on the palate. The acidity is moderate. Above all, the sweet and tart character are to be emphasised in absolute symbiosis. It builds to an enormous opulence and is elevated to a broad pedestal. Aromatically, the Sencha flavours come through again. One could compare the mouthfeel to a mature vintage Champagne. Juicy, taut and long-lasting in the finish.
