Sparkling golden yellow with cloudiness, delicate red reflections
Nose
Restrained, it reveals its oxidative, nutty aromas. Next to it, the thought of warm brioche spread with plenty of butter builds up. Salted butter and almond complement these impressions very well. Kaffir lime spreads out alongside bergamot and lychee. Nutmeg is clearly recognisable and is surrounded by yellow flowers. Caramelised quince as well as quince juice make their appearance with a little temperature alongside ripe apple. Hay and dried herbs, such as marjoram and thyme, provide honest, rustic spice to finish.
Palate
On the palate, it stands out above all for its balance. Bitterness and acidity act parallel to each other. The tart notes settle on the palate and provide structure. The acidity works skilfully against it and stretches vertically into the length. This brings freshness and drinking flow. It has a good bite and a lot of pull. The nutty aromas are pleasantly recognisable in the finish, without being overpowering or dominating. Restrained, it is reminiscent of salted caramel. The kaffir lime is also noticeable again in the finish and puts its stamp on the overall experience. But balance is certainly its great strength.
