Nose
The nose is surprisingly well-behaved and discreet for its make. It smells pleasantly of herbal and flower teas. Sencha also provides a depth and honesty. Dried quince peel, hay flower and almond support this serious idea. Very delicately, it reveals nutmeg as well as orange zest, tangerine skin and lychee. On the spicy side, clove, allspice and saffron become noticeable as the temperature rises. The yeast presents itself in the form of brioche and toasted butter toast. A slightly smoky component and a little wood give it the final touch.
Palate
On the palate, it makes the tongue click. Dry as dust and crisp. The Natural "Gemischter Satz" pushes on well with plenty of pressure. The bitterness is present, but pleasantly integrated. It roughens the tongue a little. A positively rustic wine with many enlightening and elegant moments. Umami it presents to the fullest extent. Behind the dense tumult of flavours and aromas, there is a clear minerality. This competes with the emerging creaminess as well as the yeasty melt. In the finish, it leads us astray. It seems juicy and taut. Its drinking flow is enormously animating, also due to the fine bitterness. The ethereal nuances as well as orange zest and blossom clearly characterise the finish.
