Grappoli del Grillo is undoubtedly an icon of dry Sicilian wine. Although the Grillo has been cultivated in Sicily since the Phoenicians, it seems that it has only ever been used to produce the sweet fortified Marsala wine. Until Marco de Bartoli first pressed a dry wine from it in 1990. Grown in the Contrada Samperi, the grapes are hand-picked and, after rigorous selection, pressed and fermented spontaneously in steel. Then the clear must is moved to French tonneaux and used barriques to preserve the fruit and freshness of the wine. After 12 months on the fine lees with battonage, it is bottled after minimal addition of sulfur. The Grappoli del Grillo has an amazing ageing potential, so it is worth cellaring a few bottles.

Nose

Marco de Bartoli's 2018 Grappoli del Grillo is once again the benchmark for Grillo. Delicate yeasty notes are flanked by citrus notes of green mandarin, bergamot and cedro lemons, with wild herbs like bay leaf and rosemary framing the fruity cascades. The conglomerate of fruity-ethereal components builds more and more in the glass with increasing aeration, timely caraffing is therefore imperatively recommended.

Mouth

An equilibrium on the palate that, in pure understatement, unites all the participating players into something that is greater than their individual contributions. The fruit never stands alone, but is always inspired by the lees, which in turn links to the aromatic phenolic of the wine. The acidity acts quietly yet decisively, combining fruit, salt and tannin into a grand whole that I would describe as having a warm, pulsating bass. A wine for now, for tomorrow and the day after tomorrow, but in any case for a courageous cuisine at eye level.
