Fragrances
Predominant in this 2005 Gewurztraminer Heimbourg Sélection de Grains Nobles, are fragrant notes of roses and rose oil, completed by elderflower, lavender and boxwood. This floral round dance is joined by a rich selection of sweet and well-ripened fruits such as peach, apple, pear, pineapple and mango. The whole is wonderfully rounded off by sweet nuances of beeswax and honey.
Taste experience
With its sweet yet highly concentrated composition, the 2005 Gewurztraminer Heimbourg Sélection de Grains Nobles hits the palate. Its invigorating acidity mixes with fine bitter notes reminiscent of green tea and gives the wine its spicy and sophisticated character. Despite its fullness and concentration, it invites you to escape and presents itself in a decidedly dynamic way!

The Gewürztraminer grape is characterised by its thick skin, which makes it resistant to noble rot and probably explains why Trockenbeerenauslesen are more common with the Pinot Gris grape. In 2005, however, exceptionally favourable weather conditions and severe noble rot presented an opportunity to produce a Trockenbeerenauslese with this grape variety. Once the acid balance was ideal, the berries were harvested with the knowledge that the wine could handle an exceptionally high sugar concentration. The only drawback is the microscopic production volume. Truly delicate are the scents of old roses, lychee, orange marmalade, candied fruits and wonderful honey notes. Electrifyingly, the sweetness on the palate recedes behind the soft, velvety texture to reveal an impressive parade of sweet fruits. The Trockenbeerenauslese is complex and harmonious with a long finish and full of finesse.

For a complete taste experience, it is recommended to enjoy this wine with Grilled Peach and Vanilla Panna Cotta or perhaps with Pan Cake filled with lemon and sugar. An interesting combination would also be Baked bananas with honey and cinnamon ice cream or fresh goat cheese on a warm baguette, doused with wild mountain flower honey.
