Wine information

The Gevrey-Chambertin comes from the En Billard site near the winery cellar. The vines were planted in 1983. The vineyard work is organic, partly biodynamic and very labour-intensive. The Pinot Noir was de-stemmed to 70 % in tanks and aged for 24 months in used oak barrels with up to 25 % of new wood. Jérôme used only indigenous yeasts, there was no fining, no enzymes and only light filtration, and no, or if there was, then only very low doses of SO2. About 2,100 bottles were produced.

Color

deep ruby red

Nose

Compared to La Justice The Gevrey-Chambertin En Billard creamier, fleshier and, at the moment, also a little more open. On the nose, this is already a very charming wine with clear notes of strawberries and raspberries, ripe cherries and the best chocolate.

Palate

On the palate, the perfume of ripe berries and cherries becomes even more present, underpinned with notes of graphite, herbs, bread spices and peonies. The fruit and the present acidity provide plenty of juice on the palate. The tannin in the long finish still seems a little dry with a fine bitterness, but this should only be a matter of time before it starts to melt. All in all, this expressive Gevrey-Chambertin already very seductive.

  • Hare pepper with onions, bacon and potato-celery puree
