The depths of a dark purple coloured wine, flirting almost to the brim with an unsurpassed density, opens the experience of the 2019 Sgarzon. This untamed and organic nectar literally demands oxygen to express its engaging essence.

It exudes poetry in the form of a masculine-sensitive berry fruit, reminiscent of the forces of nature such as sloes, Rowan berries and elder wood. With hints of beetroot, ivy and boxwood, side effects emerge to further embellish the olfactory palette. The bouquet of this wine is like a tightly woven symphony of the senses that gains in tension the more one tries to unravel its nuances of taste.

On the board it is wonderfully complex, trickling freshly through the youthful acidity and refined tannin structure that nevertheless makes it approachable. The shimmering opulence of the dark berry flavour melds with the earthy aromas it showed on the nose, enhanced by a subtle mineral note and a hint of salt. There is also a hint of sour cherry that enlivens the palate. Like an ever-changing work of art, this wine reveals its fascination in an enjoyable slowness and is therefore worth tasting several times over several days. In its current form, it is an unpolished gem that shines all the more with the right preparation.

If there is an urge to drink it now, it is advisable to decant it beforehand and serve it well chilled in a generous glass to realise its full potential.

Perfect culinary accompaniments include creamy Robiola cheese on gluten-kissed green asparagus, garnished with fresh figs and caramelised walnut pieces. Alternatively, a heavenly saltimbocca of majestic monkfish nestled on dried tomatoes and thyme-infused gnocchi. A delicately warm smoked roast beef with rosy braised peppers, enhanced with the scent of fresh rosemary, would also complement this wine beautifully.
