The name of the Fontane Bianche refers to the colour of the white, barren chalky soils where the Catarratto grows best. With tact, homeopathic 5% Zibbibo aka Moscatel d'Alexandrie is added to it to give some fragrance to the austere Catarratto with its distinctive character. Harvested in September, the yield averages seven tonnes per hectare. The grapes are pressed and macerate on the skins for 24 hours under temperature control. Fermented spontaneously in steel tanks, the wine matures on its lees for six months before being released for sale.

Nose
With pronounced ripeness and delicate fruit, it meets you at the first sniff and visibly defoliates. The typical Catarratto aromas of camomile and bitter herbs are overshadowed by subtle floral and fruity notes. Lemon custard and orange peel mingle with dried flowers, elderflower, jasmine and green tea, borage and chervil mark the herbal notes.
Mouth
The 2020 Fontane Bianche from VinoLauria is generous on the palate. With great intensity, it spreads aromatically from animating astringency to extract-rich fruit and a salty finish. Stimulatingly tart, it is outlined by the characteristic bitter notes of Catarratto, at times reminiscent of bitter almond. The leafy phenolic gives it its gentle contour on the tongue's edge and the creamy melt, the dash of Zibbibo provides fruity play in the finish.
