The grapes for this exquisite sparkling wine were carefully harvested from the magnificent vineyards of Langenlois and Gumpoldskirchen. The harvest took place manually in 20 kg baskets received between early and mid-September 2015. Complete grape pressing, which yielded a yield of 50 litres of juice from 100 kg of grapes, was followed by about 40 hours of pre-clarification before Pinot Noir, St. Laurent and Zweigelt underwent a spontaneous fermentation process at 18 to 22°C. This took place over a period of two to four weeks in steel tanks, where the wine rested on its fine lees for a further six months. The sealing of the exquisite cuvée took place on 1 August 2017, before it was stored on the lees until July 2019. This was followed by manual riddling, with the addition of 3 g/l dosage and around 20 mg/l SO2 before bottling and 15 mg/l during disgorgement.
Visually, this sparkling wine delights in a pretty salmon hue, supported by a lively mousseux. On the nose, this Brut Rosé presents itself as a refreshingly cool and taut sparkling wine that looks on with both floral and red berry tones. Prominent aromas are mainly red currants, crisp, freshly ripened wild strawberries, sour and sweet cherries. The sparkling wine is given a charming twist by additional nuances of nuts and the playfulness of freshly buttered brioche.
On the palate, the cool notes present themselves again, but overall the sparkling wine seems fuller there and dresses the mouth with charmingly ripe, sweet accents. In addition to red and a touch of darker fruit notes, there is a hint of gianduia. The mousseux stands out as fine and lively and the sparkling wine appears powerful and at the same time balanced, fine and elegant. Despite sweet hints, it does without unnecessary dosage and instead skilfully plays with fine acidity against the fruit.
Food recommendations:
This sparkling wine would go perfectly with the slightly spicy pumpkin pan with eggs. Smoked haddock balls with leek and potatoes are also a combination that harmonises perfectly. As a vegetarian option, a courgette casserole with bechamel sauce and parmesan could be the perfect accompaniment.
