Evoé is based on traditional methodology and at the same time has a zeitgeisty effect in times of low alcohol and digestibility.
Vasco Croft and his team use must and grape skin from the autochthonous varieties Loureiro 50%, Alvarelhao 45% as well as Vinhao 5%.
Harvesting took place between 1 - 10 September.
After whole bunch pressing, spring water was added to lighten the must. The potential resulting alcohol is given as 6.00 % vol.
Spontaneous fermentation took place in steel tanks and was bottled towards the end of fermentation, resulting in an active but not dominant carbonic acidity.
They call it a flavoured wine-based drink.
Color
Cloudy rosehip red with brown and orange reflections
Nose
Wild and spicy at the same time. The nose shows elderflower as well as berry and raspberry. Rosehip, red currant and strawberry come to the fore as well as red apple, quince compote and baked apple. It shows a cool finesse, but dances around the fruit again and again. It reflects its cool surroundings. Tarte Tatin as well as shortcrust pastry give it another dimension, along with some wild herbs.
Palate
The carbonic acid takes over the beat on the palate. Foaming and always increasing, it builds up on the palate. The resulting melting does not make it lose its lightness. This lightness continues on the palate. It dances around the fruit like a dancer and presents nutty and spicy aromas in the form of a pirouette. This is again reminiscent of fine pastries around apple, quince and nuts. The skin of red apples together with its mixture of tartness and freshness characterises the reverberation.
