This exceptional drop is made from 100 per cent Xarel-Lo, which thrives on clay soil.
Processing details
Spontaneous fermentation took place with wild yeasts and unfolded over eight months in four-year-old 300-litre Burgundy barriques.

Fragrance profile
The eccentric Espenya lynx is unique, the clear signature of the winemaker is unmistakable. The restrained Xarel-lo gives the terroir a chance to fully develop. Its finish, a subtle yeasty undertone, is a perfect partnership with notes of wet stone and wet chalk. Flavours of lightly smoked, caramelised quince and fresh pears resonate harmoniously on the edge. With patience, this glass also exudes the scent of yellow blossoms and a hint of almond.

From the first sip, this wine captures the taste buds. A remarkable salinity that spreads across the palate creates a striking presence. The balanced but by no means restrained acidity balances the mineral experience. A combination of salt and acidity that promises an emotional rollercoaster ride. One cannot help but ascribe the attributes "timeless" and "great" to this wine.
