Konstantin Weiser and Alexandra Künstler run this small, 4ha winery organically. Next to Clemens Busch, the two of them form the Sperrspitze in this area. A large part of the steep slopes is in single-pole cultivation and thus very time-consuming to work. Blue slate forms the base in the vineyards in Trarbach and Enkirch. Grape quality is the top priority for both of them. They attach importance to moderate Oechsle values and a crisp acid structure. The fermentation takes place spontaneously to 100%. The dry qualities are traditionally vinified in barrels. With the residual sweet and noble sweet wines Inox comes into play. Oxidation plays a controlled role during the vinification in order to bring out the minerality. The wines should never be fruit-oriented. The maturation on the yeast is untypically long for the region. However, from my point of view, this has a noticeably positive effect on the mouthfeel. Konstantin Weiser has also made it his business to work out the individual predicates with noticeable differences, because the transitions are often fluid.
The Auslese is also clearly different from the Spätlese. The botrytis-affected berries are manually separated from the harvests of the other predicates. Rarely can these three stages be tasted so clearly separable from each other.

Nose

After the predicates Kabinett and Spätlese from the same site and the vintage 2019 have convinced so far, I take this glass with very high expectations...
The colour play is rather yellow and rich. Candied as well as ripe pineapple. A little lemon balm and green apple. But also a herbal note that reminds of freshly chopped parsley. An intense honey tone, which can be traced back to the ripeness of the grapes and inevitably gives a feeling of pleasant sweetness.

Palate

As with the lower predicates, the Auslese also provides great drinking pleasure. The combination of fruit sweetness, the cool tone of the slate as well as a gripping acidity allow here great emotions. Pure happiness and joy. A German uniqueness that is much too little appreciated.
The sweetness is wonderfully integrated. The very pleasant acidity is delicately opposed. The sensory impression of pineapple and apple as well as honey and fresh herbs is reflected here, whereby the fruit clearly dominates. A breath of mango and something curry makes itself broad.
