The white Albillo grape variety is cultivated on about 3,000 hectares in central Spain. Basically, it yields relatively low-acid wines. At Callejo, it is grown on clayey and calcareous soils. El Lebrero, the » "hare-hunted" wine, is fermented spontaneously and aged 60 % in new French wood and 40 % in inox.

Nose:
El Lebrero shows a lot of pressure and freshness right from the start, which is rather forced than slowed down by the obvious use of wood. The wood delivers a lot of tropical aromas, especially an almost sharp note of just ripened pineapple, in which lime and lemon mix, some mint and with increasing air also stone fruit. The cool fermentation provides striking green primary flavours, the wood ageing for substance in the background.

Mouth:
The Albillo was deliberately developed fresh and crisp at Callejo. As in the fragrance, the wine initially shows the green side with lime, herbs, young pineapple and apple, before it swings a little towards maturity and thus also brings a little more yellow fruit notes into play. The wood coats the fruit with fine creaminess and some caramel, but takes nothing away from the clarity and liveliness.
