Location and soil
Terlan Lieben Aich, Eichhorn Vineyard. A south-western slope at 300 metres above sea level with a mild, breezy microclimate and water-permeable, sandy loam on porphyry weathered rock, the soil with the greatest mineral structure in the vineyard.
Expansion
The destemmed grape berries remained in the press for twelve hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden barrels, partly spontaneously with the grape's own yeasts. During the four-month aging on the fine yeast refined aroma and taste.
Color
Bright, luminous yellow with delicate green reflections.
Nose
The 2021 Eichhorn is an elegant and fine wine that beguiles with fruity notes of apple, pear and quince. Floral notes lend it a beguiling fragrance, and fine almond and nut aromas also join in.
Palate
On the tongue, it impresses with juiciness and discreet restraint, a fine spiciness and a salty note. A real all-rounder that merely subtly accompanies the dishes it accompanies and never dominates.
