Wine profile
This outstanding Chardonnay comes from the "Dog's Teeth Murderer" plot - a small jewel of 0.35 hectares, triumphant on an elevated plateau of Mont Rachet. This south-eastern plateau is characterised by an iron-rich limestone and marble soil. Careful hand-harvesting and transport in crates ensure the integrity of the grapes. They were crushed on arrival at the fermentation cellar and pressed in a traditional basket press. After a short stay in tanks for clarification, both alcoholic and malolactic fermentation took place. The wine was aged in used oak barrels, not filtered and only lightly sulphured.

Aroma
The Saint Aubin 1er Cru is a lively and exciting Chardonnay that impresses with its variety of citrus fruits. It envelops the senses with a ripe pineapple kick and crisp stone fruit. With a little time in the glass, it develops additional scents of tobacco, mint, chervil, almonds and shows hints of numerous spices that reflect the charm of the vineyard: Clove and lemon curd are particularly dominant here.
Taste
On the palate, it is fuller and riper than its bouquet suggests. It flows creamy and silky over the tongue and brings out an impressive liveliness and fleshy fruit. The wine unfolds a balance between its ripe character, dense structure and mineral vibration that makes it an intense drinking experience. This wine definitely still has a lot to offer!
Food carrier
This versatile Chardonnay is perfect with a selection of cheeses au gratin on cauliflower. For fish lovers, sole with a herb crust and Espelette beurre blanc could be the right choice. Another option is cooked prawns with a hint of nutmeg and cayenne.
Alternatively, you could enjoy it with roast chicken with rosemary or with a creamy butternut squash soup with a dollop of cream. A fresh green salad with roasted almonds and goat cheese is also a great accompaniment and rounds off the enjoyment experience.
