Tasting note from from 07.04.2022, Copyright Sebastian Bordthäuser

The cousins Jean-Laurent and Jean-Dominique Vacheron have been working organically for many years, but only became biodynamically certified in 2007. This step was the logical consequence of the uncompromising quality thinking of the two, who have the grapes from the 47-hectare domaine all picked by hand.

Les Romains comes from a steep slope with a south-western exposure. The vines are on average 50 years old and grow on Jura limestone and Eocene flint soils. The wines ferment spontaneously with their own yeasts in Stockinger barrels.

Color

Bright straw yellow with green reflections, bright and clear.

Nose

On the nose, the 2020 Les Romains from Domaine Vacheron forms an isosceles triangle of fruit, spice and minerality in equal proportions. As with all of Vacheron's single-vineyard wines, it needs oxygen contact in its youth to start chatting. It starts with herbal notes of wild thyme and aniseed, accompanied by ripe citrus aromas of pink grapefruit and green mandarin, as well as the obligatory white currant. Wet stone and a discreet reduction provide additional spice. Caraffing in good time is highly recommended!

Mouth

On the palate, Les Romains is finely chiselled, as if chiselled with sharp contours in marble. In its youthful stage, it is defined by its exuberant extract and its immense inner density, underlined by its powerful, pulsating minerality. The fruit is reduced to the essentials, as if it knew that the leading role is not granted to it anyway. The acidity is optimally packed into the firm structure and takes the wine into the epic finish. Buy now, drink later - highest ageing potential!

Food recommendations from Sebastian Bordthäuser

  • Fresh goat cheese crostini with elderberry capers, green almonds and chervil pesto
  • Pike dumplings on leaf spinach with Sancerre butter
  • Shoulder of kid with fennel, clementines and star anise from the oven
