The Slovenian site "Ciringa", located at an altitude of 340 to 480 metres directly next to the premium site Zieregg, is characterised by its barren coral limestone soils and a light, brown layer of earth. An ideal terroir for creating expressive, mineral Sauvignon Blancs that captivate with their purist seriousness.
The spontaneous fermentation process followed a long skin maceration period and was aged on the lees for over 50 months. The wine is bottled unfiltered.
A subtly tinted pale golden yellow with delicate green reflections.
Initially, the 2017 Pruh Sauvignon Blanc from Domaine Ciringa appears reserved due to its youthful character. At the beginning, it demands can and glass width, then notes of wild herbs, yeast and clearly defined lime zest open up. With a longer opening time, its fruity character intensifies - citrus fruits meet mango, honeydew melon, star fruit and young pineapple, interspersed with nuances of cassis and elderflower.
On the palate, the wine is spicy, distinctive and sophisticated. The minerality seems exuberant and has a refreshing effect with its invigorating acidity. The fruit notes continue to remind of citrus fruits, lightly salt-dipped, as well as green mango. A long aftertaste marked by intense minerality and a spicy tannin framework characterises this impressive white wine. A wine of remarkable depth and great ageing potential that calls for dishes as intense as itself.
It is essential to decant this wine and not to enjoy it too cold from large glasses.
