Finest cuvée based on Vermentinu, complemented by the rare variety of Brustianu, Biancu Gentile, Genovese and Rossola Bianca. The production is extremely exclusive with 4000 bottles. After the grapes from each variety are pressed, static pre-clarification follows for a period of 24 to 48 hours before the wines are fermented spontaneously individually in 600 litre demi-muids. A nine-month ageing in tank on the full lees provides the final touch before the cuvée is assembled from the best parts and aged for another two months before bottling. The Diplomate Cuvée impresses with its intensity and elegance. The aromas of the macchia blend harmoniously with peaches, pears and tropical fruits, while the density, energy, minerality and immense length make the wine an absolute experience.

Colour: A shiny, greenish white gold.

Nose: This cuvée always consists of Vermentinu and the rare varieties Brustiano, Bianco Gentile, Genovese and Rossola Bianca, which were put together by his father in the 1960s. The intense scent of white and yellow flowers, the herbs of the maquis and a variety of fruits, including cherimoya, fresh pears and white peaches, envelop the nose and are underlined by subtle accents of yellow gooseberries, mirabelles and slightly sweetened lemons, grapefruit and lemon zest. A hint of iodine rounds off the multi-layered aroma.

Taste: Intense and dense with a silky texture. Immediately noticeable is the mouthwatering freshness, coupled with iodine and salt, which releases a mineral tension, accompanied by refined, peppery bitter tones reminiscent of almonds and grapefruit. With the fine acidity, aromas of citrus and lightly candied lemon zest emerge, followed by maquis and wild herbs. The energy and vibrancy of the wine is fascinating and makes it a rare treat that is still characterised by youthful freshness.

Suitable food recommendations could be green endive salad with poached egg, porcini mushrooms and flower cheese or fresh mussels with lime. Vitello tonnato - thin slices of veal with a tuna cream - would also be a good choice.
