This exquisite white cuvée is fascinating, handcrafted from Vermentinu and the rare varieties Brustianu, Biancu Gentile, Genovese and Rossola Bianca. With a limited production of only 4000 bottles, every sip is a privilege. Each grape is fully pressed and rests for 24 to 48 hours for pre-clarification before spontaneous fermentation in 600-litre demi-muids. After nine months of maturation on the full lees, the cuvée is created by carefully selecting the best batches of grapes and goes into maturation for another two months before bottling. Overwhelming in its intensity and elegance, the aromas of the maquis beam a symphony of peach, pear and tropical fruit to the nose. Its notable characteristics, however, are density, energy, minerality and its stunning length.
In terms of colour, the wine presents itself in a radiant light gold with discreet green reflections. Its bouquet seems concentrated and closed at first, but releases itself over time and unfolds aromas of camomile, broom and lemon blossom. Underneath - as if ripened in the summer sun - peaches and melons as well as mirabelles and red apples, accompanied by a hint of sweetness. With more air, notes of apricot, peach compote, grilled oranges as well as aniseed and pine needles develop. This wine unfolds best after decanting and requires some patience and special attention.
On the palate, the wine is silky and velvety, a creamy texture comes to the fore. The ripe and spicy yellow fruits overwhelm the palate, surrounded by peppery bitter notes and a hint of umani. Notes of banana, quince and lemon peel combine with a touch of candied lemon and the characteristic accents of the maquis as well as a hint of light tobacco. Despite its maturity, the wine retains freshness and tension, ensuring excellent balance. Its impressive finish manifests itself through a striking salty minerality.
As a food companion, the wine goes perfectly with a risotto with exotic mushrooms, scallops with a clementine sour cream sauce or juicy chicken fillets with peaches, chopped almonds and fresh thyme.
