Tasting note from dated 21.12.2020, Copyright André Dominé

White top cuvée based on Vermentinu with the rare varieties Brustianu, Biancu Gentile, Genovese and Rossola Bianca. Production 4000 bottles. After whole cluster pressing of each variety, there is a static pre-clarification of 24 to 48 hours before the wines ferment spontaneously separately in demi-muids of 600 litres. After nine months of aging in tank on the full lees, Jean-Charles composes the cuvée from the best lots and then ages it for another two months before bottling. Diplomate impresses with intensity and elegance. The aromas of the macchia combine with peaches, pears and tropical fruits. But what makes the wine so special is its density, energy, minerality and immense length.

Color

Bright light straw gold with a slight green shimmer

Nose

Intensive smell of the herbs of the Macchia, of immortelle, myrtle and broom and easily developed flavours like butter, roasted nuts, marzipan, also white pepper, cumin as well as a breath of curry. Ripe pears, mirabelles and pineapple join in. Various citrus aromas appear from the waves of fragrances, such as lightly candied lemon zest and an accent of salt, which gives the complex, profound bouquet a mineral touch.

Taste

On the palate, this Diplomate impresses with its energy and power, with which it dynamically pushes forward, whereby here, too - its distinguishing feature - the finest bitter notes provide special tension. At the same time, a wonderful, dense, velvety texture, the impressive volume and the pithy structure stand out. Creamy ripe yellow fruit and natural spice give it a lot of elegance; very long invigorating finish with refined minerality.
