The Vigna "Der Keil" is perched on a south-facing slope at a fluffy 250 metres above sea level, overlooking a lake. It is the absolute optimum of warmth that the vineyards of South Tyrol have to offer. Old vines, tended in a pergola system, deepen their roots in lime-rich, sandy loam soils.
After destacking, the grape berries were transferred to wooden vats for maceration, matured naturally with yeast from our own production. Maceration extended over one week, characterised by relatively low temperatures and minimal maceration. A five-month maturation period on the fine yeast in large wooden barrels ensures refinement of taste and aroma.
The eye is met by a bright, sparkling ruby red with violet reflections. The 2021 Kalterersee "The Wedge of Manincor" is a direct and unadulterated expression of its terroir. Aromas of cherry, sloe, rowan and cranberry mingle with notes reminiscent of bread crust and wild herbs, a beguiling freshness that already evokes pleasure in the nose.
The palate shows a juicy fruitiness and refreshing acidity. Without tannin, but with a hint of spice that makes you want to try the simple, down-to-earth and tasty dishes of the region.
The culinary partners of this wine could vary. Perhaps a classic Caprese salad, smoked ham served with crusty flatbread, or tagliatelle in a hearty sauce, sprinkled with fresh rosemary and Parmesan. Besides this traditional pairing, the wine could also go well with a Mediterranean vegetable stew or grilled tuna.
