Color:
The wine presents itself in a bright garnet red with copper reflections and a small-bubbled, yet lively perlage clear and shiny in the glass.
Nose:
Completely devoted to its grape variety, the vinous bouquet of this Pinot Noir, which after four days of macération carbonique, has begun the journey to turn its innermost to the outside, reveals itself.
Although it is a sparkling wine, this wine should definitely be opened well in advance of drinking; unless you want to miss out.
The puristic scent of dried rosehip and sea buckthorn is supported by the equally fruity and herbal aroma of a wild strawberry punch with a little mint, woodruff and a hint of chili.
Palate:
With its delicate and delicately tickling perlage, the 2012 Sève Rosé de Saignée Brut Nature from Olivier Horiot does not have to make any great effort to win over the palate, but has it wrapped around its finger in the blink of an eye. In addition to its glorious red fruit, the Pinot now also lets its earthiness and spiciness come to light, giving it depth and expressiveness. Sparse and bone-dry, it has many legs; from a vinous aperitif to an elegant dining companion to the night cap of a successful day, it is up for anything.
