The base wines are 35% Pinot Noir, 40% Chardonnay and 35% Pinot Meunier.
40% are reserve wines.
The vines are located in different parcels in Chamery, Vrigny and Coulommes-la-Montagne. All sites are located in the Montagne de Reims and are classified as 1er Cru.
The average age of the vines is estimated at 35 years.
85% are fermented in steel tanks, 15% in oak barrels. Malolactic fermentation took place for all grape varieties.
The vin clair are matured for eight months on the fine lees before blending with the reserve wines.

Nose
The Cuvée Perpetuelle Non Dosé from Bonnet-Ponson is developing into a real classic and consistently high quality. On the nose, it exudes plenty of citrus notes, but in a pleasantly unusual way. Clementines and orange zest, some grapefruit juice and blood orange. The tangerine skin combines this in a fresh as well as characterfully tart way. Behind it, there is pear and a hint of ripe apple. Fresh and dried herbs can be ideally described in the form of parsley, savory, marjoram and a little lemon balm. Delicately, a hint of cold smoke can be detected. Quietly and shyly, it also hints at maritime traces as well as a tendency towards oyster shell. The stony and chalky notes are still almost completely hidden. With time in the glass, the fruit develops very much in the direction of yellow stone fruits. Mirabelle and apricot as well as a hint of tarte tatin are clearly perceptible.
Palate
It reveals its zero dosage character not through harshness or clashing minerality, but through great harmony and balance. It simply suits it very, very well to have fewer grams on the hip. The fruit is thus clearly shown to advantage without getting too full. The finely chiselled acid structure runs through it like a red thread. On the palate and especially in the aftertaste, the fruit is very similar to the last impressions. The colour tends to be yellow. It plays between fruit, tart as well as acid accents. The stone fruit now clearly dominates the citrus notes. In itself, it is very coherent with skilful edges and corners. Its mineral base keeps it compactly together.
