Nose
With its bouquet, this Champagne of 80% Pinot Noir and 20% Pinot Blanc has arrived at a fork in the road that beckons with the charms of both of their directions. In addition to its yellow-fleshed fruit of ripe pear, Charentais melon and Sharon fruit, the cuvée is particularly captivating with two attributes. On the one hand, the scent of freshly baked madeleines, ladyfingers and honey cake horses, which makes the hearts of all baker's children beat faster; and on the other hand, the ethereal notes of spruce shoots and rosemary as well as lemon balm, yarrow and thyme blossoms, whose aromas are captured in syrup with the help of lauter sugar.
Palate
On the palate, the seductive discrepancy between juicy, vitalizing fruit, herbal, ethereal spice and the nature of comforting security, as it usually has the scent and taste of fresh baked goods. The Métisse Brut Nature from Olivier Horiot conquers the mouth with a lively, yet extremely delicate and delicate perlage as well as a chiseling acidity. His motto is to get the circulation going by snapping his fingers. In the immediate aftertaste, however, it reverberates sparsely and with long breath and helps to drink pleasure also far beyond the aperitif.
