Color

In shining pure gold and with a subtle, fine perlage the wine shows itself clearly and brilliantly in the glass.

Nose

The multi-layered fragrance of this unique Chenin Blanc is like the nasal walk down the staircase, sparsely lit with studded lamps, into a damp stately cellar. It smells most beautifully of must. In addition, dried fruit in the form of apricot and plum is joined and extended by the association of earthy sweetness triggered by the aromas of sugar beet, candied carrot and pumpkin. These, ripe fruit based, components go hand in hand with the leathery characteristics of a tobacco leaf, as well as the toasty aromatics of roasted chickpeas and hazelnut cream. This is all about ripe wine with delicate aging notes.

Palate

The 1997 Crémant de Vouvray Pétillant Brut from Domaine Huet hits the palate with a softly tickling perlage. As suggested by its bouquet, this is not simply a Crémant, but a profound wine with immense facets. Its mousseux is not the only thing that imbues it with a rejuvenating freshness, supported by a firm phenolic quality. Unwavering and with an iron hand, it holds on to the silken thread of acidity and provides great pleasure through its irreplaceable extravagance.

Food recommendations from Peter Müller

  • Confit turnip stalk with quail egg, sea buckthorn and truffle jus
  • Fried skate wing with olive-walnut tapenade, green tomatoes and pearl barley
  • Char from the roman pot with mushroom stuffing and navettes
