Information about the wine:

The »Clos de la Coulée de Serrant" covers 7 hectares, planted in 1130. A total of 885 vintages of this famous single vineyard have been vinified so far. The average age of the Chenin vines is 40 years, although some vines are over 80 years old and grow on a soil of slate and quartz. The vineyard has been farmed biodynamically since 1981. Its yield is around 22 hl/ha.

Color:

golden yellow

Nose:

Ripe pear, hay and beeswax are typical notes that are always found in ripe Savennières. And so it is here as well. The grapes of the flagship of Nicolas Joly were harvested very ripe. Baked apple is mixed into the composition, furthermore a very slightly oxidative note, some wood and walnut, later also camomile, cardamom and a fine salt note.

Mouth:

On the palate, the wine makes pressure. It benefits from tannins that provide a grippy texture. They accompany the ripe pome fruit, which combines with orange zest, notes of quince bread and apple peel. With air, the acidity becomes increasingly offensive, the wine opens up and gains more grip while remaining supple. The alcohol provides warmth that carries over into the long finish.

Food recommendations by Christoph Raffelt:

  • Risotto with wild asparagus and morels (vegetarian)
  • Turbot with ginger blood orange foam
  • Asparagus with elderflowers and almond milk hollandaise
