Wine information
Even though the winery is silent about the exact composition of the cuvée, the basis of this wine is clearly a Cuvée Blanc Traditionwhich usually consists of one-third Savagnin and two-thirds Chardonnay. Both varieties are traditionally fermented and aged together in the barrel. It is a Vin de voileThis means that it is no longer topped up during storage. However, the wine is much less oxidative than the 2017. Savagnin vin de voile. In this respect, filling may have been omitted only sporadically, and only a light layer of pile has formed.

Nose
The Cuvée Tradition 2016 smells quite discreetly of hazelnuts and a few walnuts, some fruit bread, salted lemons and salted almonds, as well as sliced yellow pears and crumbly apples. There is also a fine note of caramel.
Palate
On the palate, this is a silky, ripe, wonderfully mature, dignified and deep wine whose yellow fruit blends congenially with notes of crisp apples, salt and umami, nuts and almonds. Here, too, the austere oxidation note is nobly restrained, but is present and enriches the long fading wine.
