Let us look at the Chardonnay called "La Grande Chaude". This outstanding representative of its kind comes from a vineyard that was still in the conversion phase to organic cultivation at the time of the harvest. In 2021, the conversion was completed with organic certification. It is a pure Chardonnay, carefully hand-picked and spontaneously fermented in oak barrels after the removal of its stems. Its further maturation took place in oak barrels for several years.

The colour of this wine shines in light golden yellow with green-golden accents. It expresses the warm nuances of ripe yellow and partly exotic fruits, just as its name suggests. A bouquet of oranges, lemons, yellow peaches and nectarines unfolds, with a hint of mango and star fruit. Lightly roasted nuts join in, along with a fair amount of caramel. It is reminiscent of young wines by François Ganevat, often found in the Jura, including the slightly oxidative notes of brittle apples and walnuts.

On the palate, it presents itself as a juicy, ripe wine with depth and persistence, with an elegant, fresh but ripe acid vein and repeated yellow fruit notes. A creamy texture characterises this Chardonnay, bringing its character to life especially through the silky, round and elegant mouthfeel. Above all, the combination of lively minerality and creamy salted caramel on the finish characterises "La Grande Chaude".

What goes with this wine? Try it with fried prawns or a classic dish of bresse chicken, morels and cream. Alternatively, it harmonises perfectly with green and white asparagus served with an orange hollandaise or accompanied by a creamy risotto with freshly harvested chanterelles.
