François de Nicolay is the name of the Négoce business under the management of the family-owned Domaine Chandon de Briailles in Savigny-Lès-Beaune on the Côte de Beaune. This means that only wines are produced and sold that do not come from the estate's own land. The grapes, musts or wines used for this come from certified organic or biodynamic vineyards or plants that are in conversion. The wines are matured in the cellar of Chandon et Briailles and marketed under their own label.   

The Bourgogne Blanc "La Grande Châtelaine" comes from a plot with vines averaging 30 years old and a vine density of 10,000/hectare. It was fermented without added yeasts for one to six months before being aged in barriques for another 12 months.

Nose

The nose, which does not indulge in chatty posturing, seems pure and of one piece. Like a grand dame, you have to pause, because it sets the narrative tempo. To break it down into its component parts would be to disenchant it, for what do buzzwords like citrus, sage or wet chalk say when the sum here is undoubtedly greater than these modest olfactory fragments?

Mouth

On the palate, the 2018 "La Grande Châtelaine" Côtes de Beaune Blanc from Francois de Nicolay seems a bit like squaring the circle. It is sparse with juicy extract, has a grippy feel with creamy melting and a mineral coolness that subordinates the salt to the acidity. The whole comes along closed with good punch that it makes you lead your lips to the goblet again and again. Joyful without slipping into triviality and serious without delivering a proseminar.
