Nose
This Coteaux Champenois from Jerome Blin is 100% based on Pinot Meunier. The nose is enormously spicy to ethereal. Red pepper, artichoke, fennel and aniseed lead the way. This idea is complemented by coriander seeds and cubeb pepper. Grapefruit, blood orange and a little pomegranate provide a very exciting fruit component. Fine lemon zest adds a tart, fresh component. With a little patience, acacia blossoms and pine needles emerge clearly next to white pepper and conquer dominance on the stage. Underbrush as well as forest floor and cedar complement this congenially.
Palate
On the nose, the Oeil de Perdrix is racy, edgy and lean. The fruit makes way for this bulwark of cool precision. The onset of bitterness is pleasantly noticeable, which, along with the acid peaks, are the most striking elements on the palate. It is straightforward and enormously dry. The fruit tends to drift into bittersweet grapefruit and is underpinned by plenty of herbal spice. On the finish, it is drying and animating for more. A delicate form of micro-oxidation characterises the aftertaste a little, alongside the herbal spice.
