COS

Behind the acronym COS The initials of the three founders of the winery are hidden in the name: Giambattista Cilia, Giusto Occhipinti and Pinuccia Strano.

The three are not trained oenologists or winemakers, but Sicilians with heart and soul. Their common idea was born in their student days. The mission is and was to make their homeland tasty. Autochthonous grape varieties and the best sites of the Vittoria region are the precursors to their goal. Nero d'Avola succeeds on the chalky and chalky soils, Frappato, Grecanico and Insolia cool, taut and elegant. A virtually contrary image to the widespread idea of powerful, sun-fuelled wines from the southernmost tip of Italy.

Pioneers of the Amphora

Impressive is the thought behind Pithos Bianco and Pithos Rosso. With over 150 buried in the ground Clay amphorae they have created a true refuge of this ancient winemaking method. The white Grecanico grapes and, in the case of the Rosso, the varieties Nero d'Avola and Frappato ferment on the mash in the amphora. Only in late spring after the harvest is the mash pulled out of the amphorae and pressed. The wines live from Tension, energy and vitality. Hardly any other place has such a large number of amphorae in such a small space. At Foradori in Trentino you can admire this density at a comparable level.

COS winery as the driving force of the Sicilian Renaissance

Since the 1980s, the trio has turned the wine world in Sicily upside down. As an inspiration for the following generations, they are largely responsible for the rethinking and current progress of the wine scene there. Today, there is a multitude of young wineries that actively work with the local varieties and deliberately focus on Contradas, as the single vineyards are called here. On Etna Salvo Foti as a similarly formative character. Arianna Occhipinti, the niece of one of the three owners, would be another positive example.

Under the name Maldafrica hides a homage to the nearby continent to the south. The cuvée of Cabernet Sauvignon and Merlot surprises many a connoisseur in blind tasting. It is also striking that the red wines from Frappato are stylistically very similar to a Pinot Noir. So this journey clearly goes in the direction of elegance, lightness and far away from power, opulence and dark aroma concentrations. An absolute insider tip is the Olive oil from COS. They press an aromatically intense and harmonious oil from the Tonda Iblea variety.
