Wine information
At a lofty 700 metres above sea level on volcanic soil in northern Etna, the grapes of this wine thrive. After a large partial unveiling of the berries, a natural fermentation takes place and the grapes undergo an extended maceration with the skins. After 15 months of ageing in wooden barrels, it is bottled unclarified and unfiltered.
Color
It presents itself in a deep garnet red, interwoven with gentle notes of brick red.
Scent
The 2016 Cosentino reveals a complex interplay between the warmth of ripened fruits - red and dark berries, cherries and blackberries - and notes of tobacco and cedar. The scent of incense and the freshness of wild raspberries, cool stone and deep minerality form the fascinating counterbalance. As the wine develops, green tones such as green pepper, wild mint and nettle join in and add further depth.
Taste
This wine is a real charmer and promises pure drinking pleasure. After a whiff on the tongue, it glides down with refreshing acidity, fine tannins, a gentle fruit sweetness and a particularly convincing, grainy minerality. It is so enjoyable that each bottle empties amazingly quickly and each sip is a real pleasure that makes time and space irrelevant. Whether solo or accompanying aromatic, spicy dishes inspired by Italian cuisine, it is always a delight. Best served slightly chilled at around 15 °C from the carafe.
