The vines of our wine yield the Niellucciu (50%), Sciacaccarellu (40%) and Carcaghjolu Neru (10%) varieties. Harvested from 30-year-old vines on sandy south-eastern slopes at altitudes of 400-480 metres. The process of destemming was partially applied before fermentation, with the help of wild yeasts and at 25°-30°C in 40hl wooden barrels. After 45 days of maceration and maceration of the marc 1-3 times a day, bottling took place after 14-18 months of maturation in wooden barrels, without fining and only light filtration.

The wine shows a rich violet red, so intense that it remains uniform in colour almost to the rim. Its olfactory profile is profound, with notes of earth that need enough oxygen to reveal the delicious fruit aromas of sloe, sloe stone, blackcurrant, blackberry and elderberry. On top is the enticing scent of violets and peonies, combined with smoky nuances and the aromas of rosemary, black olive and stony minerality.

Looking at the palate, the dark fruit glides densely and invigoratingly over the tongue. With amazing precision, its acidity and tannins are finely woven into the fruit picture. Herbal notes, which are even more pronounced on the palate than on the nose, give it an invigorating, pure effect. This wine is the perfect companion for hearty dishes and at the same time a wonderful refreshment.

An alternative to mushroom and walnut gnocchi with caramelised radicchio is wild boar turkey with hazelnut stuffing and roasted Brussels sprouts. For those who love the taste of herbs, the fillet of lamb with garlic and herb crust and Tuscan potato gratin is also an excellent choice. As an option to the venison medallion with blackberries, porcini mushrooms and celeriac puree, you could also choose a venison seasonal pan with venison loin, morels and parsley root puree. These dishes would bring out the nuances of this wine and further develop its depth of flavour.
